The secret to a good mountain dew cake is getting the right texture and baking it just long enough. Measure the ingredients carefully, use fresh eggs, and grease the Bundt pan well so the cake comes out easily.
1cup240 ml / approximately 240 g Mountain Dew soda
3large eggsapproximately 150 g without shells
½cup110 g vegetable oil
For The Lemon Glaze
1cup120 g powdered sugar
2tablespoons30 g fresh lemon juice
1tablespoon15 g Mountain Dew soda
Instructions
Step 1
Preheat the oven to 350°F (175°C). Grease a 10–12-cup Bundt pan well with butter or baking spray, making sure to cover every groove.
Step 2
Add the lemon cake mix, Mountain Dew, eggs, and vegetable oil to a large bowl. Beat until everything is mixed well and the batter looks smooth.
Step 3
Pour the batter into the prepared Bundt pan and spread it evenly with a spatula. Give the pan a gentle tap on the counter to remove any large air bubbles.
Step 4
Bake for 40–50 minutes on the middle oven rack. Check the center with a toothpick; if it comes out clean or with a few moist crumbs, the cake is ready.
Step 5
Let the cake cool in the pan for 10–15 minutes. Turn it onto a wire rack and leave it to cool completely before adding the glaze.
Step 6
Mix the powdered sugar, fresh lemon juice, and Mountain Dew in a small bowl until smooth. Add more powdered sugar if the glaze is too thin or a little lemon juice if it is too thick.
Step 7
Drizzle the glaze over the cooled cake and let it flow down the sides. Give it a few minutes to set, then cut into slices and serve.
