Fig BBQ Sauce Recipe brings a fruity twist to classic American barbecue flavors. Ripe figs create natural sweetness, while ketchup adds tomato richness and vinegar delivers a bright, tangy finish.
1tablespoon2 g chopped fresh rosemary or 1 teaspoon (1 g) dried rosemary, or 1 tablespoon (2 g) fresh marjoram or 1 teaspoon (1 g) dried marjoram
Instructions
Step 1
Wash and chop the fresh figs into small pieces. If you’re using dried figs, chop them and set aside a little extra water to help soften them during cooking. Dice the onion and shallot, mince the garlic, and measure the remaining ingredients before you start.
Step 2
Heat the olive oil in a medium saucepan over medium heat. Add the onion and shallot, then cook for 3–4 minutes until soft. Stir in the minced garlic, Hungarian paprika, black pepper, salt, and ground cloves. Cook for another 30 seconds, stirring often so the garlic doesn’t burn.
Step 3
Add the chopped figs, ketchup, vinegar, brown sugar, honey, Worcestershire sauce, mustard, and rosemary or marjoram to the saucepan. Pour in 2 tablespoons of water and stir everything together. Bring the mixture to a gentle simmer, reduce the heat to low, and cook for 15–20 minutes. Stir occasionally until the figs soften and the sauce thickens. Add a splash of water if it gets too thick.
Step 4
Take the saucepan off the heat and let the sauce cool slightly. Blend until smooth, adding a little water if needed to reach your preferred consistency. Taste and adjust the sweetness, salt, or vinegar to suit your preference. Allow the fig BBQ sauce to cool completely, then transfer it to a clean, airtight jar and refrigerate until ready to use.
